Ingredients:
White rice flour, brown rice flour, sugar, tapioca flour, potato starch, cocoa, baking soda, salt, xanthan gum.

Yield:
10-13 muffins or 3-4 mini-loaves
Instructions:
- Preheat oven to 350.
- In large bowl mix well, 1 cup applesauce, 2/3 cup oil, 2 eggs and 1/4 tsp. vanilla extract.
- Add flour mixture from the bag and stir until all the flour is mixed in.
- Spoon into muffin liners or greased tins. Bake.
- Muffins: 23-28 minutes
- Mini-loaves: 30-35 minutes
