Description
Ingredients:
Brown rice flour, white rice flour, sugar, tapioca flour, potato starch, xanthan gum, baking soda, salt.
Net Weight:
450 grams.
Yield:
10-13 muffins or 3-4 mini-loaves
Instructions:
- Preheat oven to 350.
- In large bowl mix well, 1 cup mashed bananas, 2/3 cup oil, 2 eggs, 1/2 tsp vanilla extract.
- Add flour mixture from the bag and stir until all the flour is mixed in.
- Spoon into muffin liners or greased tins.
- Bake. Muffins- 23-28 minutes Loaves- 30-35 minutes

My wife and I have tried four different mixes and this one is our absolute favorite. The big thing though? Our 9 year old daughter Ashley, who has celiac, wants one in her lunch EVERY DAY. Guess we’ll have to buy more each time.

We ordered one of these, a chocolate muffin, apple cinnamon, pumpkin bread and banana chip (and a flat bread too). This one was a BIG hit with everyone, but every mix has been consumed, almost as fast as I can make them (especially when I brought out three kinds during tea with some girlfriends last week).
